Honey-ginger syrup: Combine 1 cup honey, 1 6-inch piece of peeled and thinly sliced ginger and 1 cup water in a saucepan over high heat, and bring to a boil. Reduce heat to medium, and simmer 5 minutes. Place in the refrigerator to steep overnight. Strain with a cheesecloth

Use a muddler to crush the mint and lime to release the mint oils and lime juice.
Add 2 more lime wedges and the sugar syrup, and muddle again to release the lime juice.
Fill the glass almost to the top with ice.
Pour the rum over the ice, and fill the glass with carbonated water.
Stir, taste, and add more sugar if desired.
